Sour Orange Curry Sausage

Inspired by the infamous Kiwi chef Mat Blak.

After watching him cook, and him tell his stories to the crowds that watch him, it’s a truly humbling experience to be a part of it. 

The sour orange part comes from the Turmeric (colour) and the Tamarind (tangy) , to contain the acidity I’ve contained the curry sauce inside the sausage. 
The sausage itself I’ve given a mild curry base.
