Aged British beef and pork belly form the base, smoked beef cheek that gives you a rich, gelatinous, and deeply flavoured middle. The Fiore di Latte mozzarella melts through the meat for a creamy, indulgent finish, while habanero and chipotle chillies bring layered heat. The mushroom powder adds umami and a touch of fennel cuts through the smoke and fat.

Grill hard over charcoal and serve with pickles and hot sauce, or slice and load into a toasted sub. Bristol-born, smokehouse-worthy.
