Inspired by the rich, slow-cooked birria stews of Jalisco, we've packed this sausage with smoked beef brisket, a complex blend of dried chillies — Ancho, Guajillo, Chipotle, and Chilli de Arbol — plus cheddar, lime zest, and fresh coriander. Deep, smoky, and layered with heat.

Grill and serve in warm tortillas with a side of consommé for dipping, or slice into a quesadilla. Seriously versatile.
