This beast of a sauce is something I've used for years in my chefing days, it brings the perfect balance of sweetness, acidity and spices to any fatty meats - specifically pork belly. It cuts through like nothing you've ever tried before.
The base of this sauce is a caramel and is slightly thicker in consistency and a strong punchy flavour so you don't need as much as you would with a bbq sauce.
Give it a good shake before each use.
